You know you could get those frozen eggplant dealies at Trader Joe's. Not that I'm pushing non-cooking, but ..hey, why not?
Yah, I have those in my fridge, but let me tell you, making fresh breaded eggplant cutlets is so worth it taste-wise. And its super easy.
