Avocado, Baby


This might be one of my proudest foodie moments to date: I made a chilled soup.

Disclaimer: I am not a chilled soup fan.

Except for when it's hot outside and I need to recover from a hard day of partying (all for the USA!) and it involves avocado.

I originally found this recipe on My New Roots, but it's actually from Whole Living.

One of the cool things about this recipe is that it has no dairy in it (2nd disclaimer: I love my cream and cheese and butter). It uses coconut water (GREAT for hangovers) and lime juice. The results are delicious. My dinner guests were very impressed.

Perfect served with Sea Breezes and these tasty bites.



*Title note: did you guys ever read this book when you were a little kid?
