Recipes Made in January

Roasted Salmon with Cherry Tomatoes
Make this, make this, make this. It is so easy and so gosh darn delicious. GOSH DARN IT!

Bucatini With Butter Roasted Tomato Sauce
Guess what the surprise ingredient is: Anchovies! I am officially a born-again anchovies-lover. Because they add a flavor layer that makes a semi-basic tomato sauce so interesting. It's not necessarily a fishy flavor, it's just something... amazing. Also very easy to make. Just pop all the ingredients in the oven for awhile. 

This is Drew's recipe, you guys! Kind of corny, but I love her, so I decided to follow the very easy instructions. Tomatoes and and Boursin cheese are big part of my diet since moving to the Netherlands (no idea why), so it was pretty easy to whip up.

Gordon Ramsay's Baked Courgette and Wild Mushroom Risotto
I had some mushrooms in the fridge, and hadn't made risotto in a long time, and this picture sealed the deal. I didn't do courgettes just because I didn't have any around. The recipe doesn't call for white wine, which I have decided is an important ingredient in risotto, so I probably won't make this one again.

I'm usually not a fan of lasagna, but my friend Nadine made this for me and I really loved it. Maybe it was because it was so homemade. So I just might have to make it for myself one of these days!

Just as the title says, this recipe makes only enough dough for two big cookies, which I thought was cool for me since my oven is quite small. And I love that you don't have to dirty any mixing equipment. A very handy recipe to have in case of emergency!
