Recently Made in April


Fettuccine with Mushrooms and Thyme
Delicious. What's a better combination than mushrooms and bacon? Plus the thyme gives the dish a wonderful earthy quality.

I served this with some salmon one night. I didn't have any almond milk, but it is quite important for thinning out the peanut butter so it actually coats the slaw. I think I just used a bit of water or something. I love the combination of salty peanut butter, spice, and soy.

Pappardelle with Caramelized Onions and Parmesan
Oh my gosh, another killer pasta recipe. The most time-consuming part of this recipe is caramelizing the onions. This dish also has thyme in it; I had some fresh, and I didn't want to waste it. 

Seems like a duh-doy recipe to include, but I've discovered that brown rice is finicky and not cooked the same way as white rice! So there you have it.

Pasta with Fresh Tomato Sauce
Pretty basic, but I often have tomatoes and basil on hand these days, so it's a nice stand-by recipe.

Almond and Pear Clafoutis 
This was my first Manger recipe I've tried, and it did not disappoint. Mimi's recipes always look gorgeous but complicated... This was not complicated though! No obscure ingredients, no fancy kitchen gadgets needed. This is a repeat in my book.

Easiest Spaghetti and Meatballs
More, pasta, I know! Can I tell you I haven't always liked meatballs? They also seem really time-consuming to make. The "easiest" in the title of this recipe attracted me, I suppose. Thanks, Martha! This will, for now on, be my go-to recipe for meatballs. Easy and delicious. I made the sauce with Marcella Hazan's basic recipe.

Roast Potatoes with Lemon, Rosemary, and Thyme
Basically, this recipe is just one big dish of roasted heaven. So you should probably make it.

Recipes Made in March

During my just-for-fun no-gluten trial, which lasted about one and a half weeks this month, I chose to make this for lunch. And then I made it again. And again. And again. Sure it would be great with crusty slices of bread, but I haven't given in to the carbs with this meal yet. It's substantial on it its own. And it's gorgeous. It's those simple flavors that you can't get enough of.

Lemon Chicken Breasts
I like to watch the Barefoot Contessa: Back to Basics on Hulu. In one episode she made this recipe, and I knew I had to try it out because a) it's so easy b) I love the flavor of lemon with chicken. But seriously, let's get back to how serious it is. The only "tedious" part is making the sauce. Then you just pop it all in the oven. I don't ever buy chicken breasts with the skin still on, but I can see how it would be good visually because the skin gets nice and browned. But yeah, the recipe works just fine with skinless chicken. It's a repeat recipe.


Another no-gluten recipe. Another Barefoot recipe. The recipe doesn't call specifically for gluten-free noodles, but I swapped them for rice noodles I think. My problem with this recipe was that it needed a kick. I think it would have been so much better with lime juice. So next time, I will try it with that. Oh, I also swapped the snap peas out for grated carrots. 

Steak was on sale at our local supermarket, and I have a weakness for steak. The herb butter in this recipe was the best part. I made an excess of it, so I kept it in the fridge for later uses. 

It was chilly day, and I was craving this old standby. Fact: Tomato soup is outstanding when made from scratch. The recipe doesn't say you need to puree it at all, but luckily our kitchen came equipped with a soup blender, so I utilized it. Great leftovers too. 

I'm sorry to say that I am horrible about drinking water. It's so boring! So in an attempt to be healthy, I made this since the flavors sounded fun. It took about a day in the fridge to cool down. I would not advise using basil, or if you do, take it out after a few hours. Leaving it in for a long time makes the water taste... mossy? It was not a good flavor. So I have another batch in the fridge sans basil.

We have a lot of corn tortillas thanks to visitors from the US, so we've been slowly but surely unfreezing batches and nomming on tacos. Last night I made them with this pico de gallo. Oh, Martha, thank you for this recipe. It is perfection. And I could seriously eat the whole batch all by myself. Especially if I had a pitcher of marg to go with it.

Recipes I tried in February

Salmon Dinner for One
I made this for two, and it worked just fine. I didn't have spinach or capers on-hand, but it still tasted amazing. And so freaking easy to make and clean up. Definitely a repeat.

Spanish Rice
I love this kind of rice with beans. It's a great recipe; just don't do what I did and use brown rice. Big no-no. Brown rice takes FOREVER to cook.

Spaghetti with Caramelized Onions, Anchovies, and Toasted Garlic Breadcrumbs
Ooohhhh mmyyy gooooddd. Yummy in my tummy. This recipe is a little more detail-oriented, but the taste is worth it. The anchovies are just game-changers.

A great way to eat green beans; I prefer this way to steamed... yuck!

Spaghetti Limone Parmeggiano
Ha, my blog Genevieve featured this recipe on her blog awhile ago, and I finally tried it out. Because I'm kind of obsessed with lemon flavored pasta. 

Roasted Cauliflower
Mmm delicious. IMO, doesn't need cilantro or lime or cumin seeds (who has time to toast and grind cumin seeds?!)

Lemon Rosemary Vegetable Stack with Lentils
I was definitely more open-ended with this recipe, but when I have time, I'm willing to follow it to a T. Because it's just so gorgeous looking. I actually just roasted regular potatoes. And cooked my lentils in chicken stock because it adds more flavor. And I didn't do the horseradish and maple vinaigrette because I don't have a blender. Also, I would never add black olives as a garnish. It doesn't need them! There's already so many flavor components going on. The lemon rosemary on the thinly roasted potatoes... Ugh, so good.

Healthy Baked Chicken Nuggets
I didn't have panko crumbs for this recipe, so I just used regular bread crumbs. I don't know if it was that or my dinky microwave oven, but they didn't turn out golden-brown like in the picture. Oh well, I'm willing to try again.

Nonno Consuelo's Bolognese Sauce
No picture, because it's an old recipe on Bon Appetit dot com. I want to find the best bolognese sauce recipe and then use it forever after. This wasn't the one. It was just so basic; there wasn't a comforting wow-factor in it. Oh well, try try again.

Roasted Salmon with Cherry Tomatoes
Make this, make this, make this. It is so easy and so gosh darn delicious. GOSH DARN IT!

Bucatini With Butter Roasted Tomato Sauce
Guess what the surprise ingredient is: Anchovies! I am officially a born-again anchovies-lover. Because they add a flavor layer that makes a semi-basic tomato sauce so interesting. It's not necessarily a fishy flavor, it's just something... amazing. Also very easy to make. Just pop all the ingredients in the oven for awhile. 

This is Drew's recipe, you guys! Kind of corny, but I love her, so I decided to follow the very easy instructions. Tomatoes and and Boursin cheese are big part of my diet since moving to the Netherlands (no idea why), so it was pretty easy to whip up.

Gordon Ramsay's Baked Courgette and Wild Mushroom Risotto
I had some mushrooms in the fridge, and hadn't made risotto in a long time, and this picture sealed the deal. I didn't do courgettes just because I didn't have any around. The recipe doesn't call for white wine, which I have decided is an important ingredient in risotto, so I probably won't make this one again.

I'm usually not a fan of lasagna, but my friend Nadine made this for me and I really loved it. Maybe it was because it was so homemade. So I just might have to make it for myself one of these days!

Just as the title says, this recipe makes only enough dough for two big cookies, which I thought was cool for me since my oven is quite small. And I love that you don't have to dirty any mixing equipment. A very handy recipe to have in case of emergency!

Made in December

As it says on the web page, you don't have to use pork. So I didn't. I used chicken instead. This recipe was super delicious. Especially when served with mashed potatoes and salad. It's a repeat!

When my mom sent me corn tortillas for Christmas, I knew I had to make fish tacos. The picture above made me think, awww yeah this looks wonderful. I last-minute trip to the market yielded just one filet of salmon, not cod as the recipe calls. But I'm flexible. So the salmon worked fine. It was amazing. The yogurt crema especially. The recipe calls for SPINACH?! On a TACO?! Ridiculous. I recommend shredded cabbage instead. Repeat!

Except I used red curry. Was that what went wrong with this recipe? I don't know. The thing that happened was that the flavor wasn't strong enough. It was boring. Crazy, huh? Not a repeat-recipe.

This is a pretty basic foundation recipe. You can add anything on top of it. I added cherry tomatoes, grated cheese, and almonds. Make it, it's great. Especially when you want something light for dinner. 

LOLing at the name of this recipe. It calls for almond flour, but I used regular. It's a great recipe because you probably have all of the ingredients in your pantry already. The olive oil makes it. Definitely a repeat.

Ohhhh this is so good. And healthy! You've hit the jackpot. I used just regular lentils instead of black ones, and they don't need to be cooked as long as the recipe says if you used canned lentils. Instead of mint, I used cilantro since I'm more partial to it.

Recipes I Tried in November

I made this as a meal for Josh to take to school during the week (cuz I'm hella domestic). I'm a weirdo and prefer out-of-the-box mac and cheese to the homemade kind, so I've never really made this dish before. I didn't like the process; there were so many steps, and soooo much cheese (don't get me wrong, I adore the stuff). BUT! But. It was so good. So amazing. Worth all the steps. 


A definite repeat dish. I'm obsessed. Really easy to make, once you get the flour-egg-breadcrumb dip down-pat. 


Good recipe, but unfortunately Josh doesn't like Brussels sprouts. I'm a fan, whatevah.

One of my favorite pasta dishes everrrrr. I think it has to do with the flavor that the guanciale (pork jowl) gives it. Confession: I almost always use pancetta or thick-cut cubed bacon, since I don't have easy access to a fancy Italian butcher shop. I could easily eat the sauce on it's own as a soup, but I think that would be considered weird.


My mom and I were recently discussing how crave-worthy this dish was. It's like the Beouf  Bourguignon of Russia, right? But I've decided this will be filed under "non-repeat." I think it was a little to heavy for our taste, as delicious as it was. There's something about eating a lot of beef that leaves you with a vaguely disgusting feeling in your body... I mean, I know we probably shouldn't be eating red meat, but sometimes you have a craving for it... and then you immediately regret it... I think the problems were a) buying the wrong cut of meat -- chunks instead of strips -- b) buying way too much of it, and c) overcooking it. Also, the dish isn't very colorful. Brown colored dishes are never too good for your health.

10 Recipes to Try This October

Eh, granted October is already more than halfway over. Whatevs. Let me tell you, three other recipes I've made this month that were delicious:

1. Thai chicken red curry soup... Served over white rice. I've made this three times already this month. Because it's actually pretty easy! I'm not a big soup-cooker, but yeah, this has become a hit in the household – a "repeat" recipe, if you will. Josh has declared it his favorite soup, which I have latched on to because he's not what I'd call a foodie; he doesn't get a freaky glimmer in his eye the way I do when looking at Bon Appetit recipes... unless you count eating a whole bar of chocolate in one sitting being a foodie (dude has a major sweet tooth). 

I think the only critique I'd give this recipe is there aren't enough veggies. It would be easy to add chopped onion, carrots, mushrooms a la what you would find in a bowl at your favorite Thai place (sadly we do not  have a favorite Thai place here in the Hague, hence me feverishly trying to master Thai recipes in order to appease Thai cravings – see no. 10 on the list). 

2. Refreshingly simple tomato pasta (ugh whoever came up with these recipe titles is a dummy)... I think this will be a repeat-recipe as well. Because it's super easy and the ingredients are easy to get. My tweaks: Instead of Habenero pepper, I did crushed red pepper. Yummo. And no parsley. I loathe parsley. I added sauteed chicken for protein (boys gotta have their protein). And woah what a difference pasta water makes to the end product! I never really got the whole "add pasta water" step until now. I guess I thought it makes everything all watered down. But no! It makes the pasta not stick together! It makes a sauce for a sauceless pasta recipe! Now I see the light!

3. Roasted vegetable and black bean tacos... Nadine and I made this together last week while the guys were in Amsterdam. It's not the easiest to find Mexican ingredients here. But it's not impossible either. No corn tortillas unfortunately. No cotija cheese (I used crumbled goat cheese instead). The key to making these babies is the finely chopped veggies. Make 'em little. They get all roasty-toasty carmelized... The sweet potato/yam was my fave.
