God Bless You, Trader Joe's

Cream of Tomato and Roasted Red Pepper Soup With Pesto Gnocchi

I stole this recipe from my mom's I Love Trader Joe's Cookbook. It is so easy; please make it for yourself and then congratulate yourself on a job well done.

INGREDIENTS
1 container TJ's Tomato and Roasted Red Pepper; 32 ounces
4 ounces Mascarpone Cheese
1/3 package TJ's Potato Gnocchi; 6.17 ounce
4 tablespoons TJ's Pesto alla Genovese
1 pinch salt; to taste
1 pinch pepper; to taste

PREPARATION
Heat the soup, then stir in the mascarpone (or cream).
While the soup heats, bring a small pot of water to a boil. Add the gnocchi and boil just until they bob to the surface, (3 or 4 minutes). Scoop them out and set aside.
Season the soup to taste with salt and pepper. Ladle into bowls and add a few gnocchi to each serving.
Drizzle a little pesto into each serving.

Prep time: 5 minutes
Cooking time: 10 minutes
